Mouthwatering Maple Glazed Hens

Yep!  Another Cornish hen recipe. 

Cornish hens are one of my favorite dishes for entertaining. They are really quick and easy to make and very effective aesthetically.

Real maple syrup is a must here, so be sure to look for "pure maple syrup" on the label with a category of at least a Grade B.

To give the hens a nice shape and to help them cook evenly, we tie the legs with twine before roasting. Instead of hens, you can substitute a whole chicken, just cook a bit longer, or even thighs.

 

2 tbsp The Spiced Turkey

1/4 c maple syrup

1 large onion, quartered

1 1/2 lbs carrots, cut into 2" lengths

1 or 2 cornish hen(s) (2 - 3 lbs)

olive oil

 

*Note:  If you can find smaller hens, certainly get them so that each person can have a half hen.  I have a hard time finding them in Bermuda.

Using kitchen twine, tie hen legs together. Drizzle with oil and season inside and out with the spice blend. Mix 2tsp of spice blend with maple syrup and put to the side.

Preheat the oven to 425°. Place vegetables in a pan, drizzle with olive oil and season with salt and pepper. Position hen on top of vegetables.

Roast for 20 minutes, checking after 10 mins. to ensure hen is not browning too fast.

Turn vegetables just to ensure they cook evenly and brush hens with maple mixture. Continue to roast (basting once more) until juices run clear when hen is pierced or until it reaches an internal temperature of 165°, probably another 10 minutes or so.
