Hot Sweet Potato with Jerk Butter
Serves 8 as a side dish
3lb sweet potato peeled and sliced (about the size of an orange segment)
5 tbsp olive oil or avocado oil or ghee
3 tbsp light brown sugar (optional)
Juice of 2 limes
For the Jerk Butter
½ stick butter, slightly softened
1 – 2 tbsp UMAMI Jerk Spice Blend
2 garlic cloves, finely chopped
Juice of ½ lime
Preheat oven to 400°.
Mix the sweet potato slices with the oil, brown sugar and lime juice turning them over with your hands until coated.
Lay them on a cookie sheet in a single layer. Put in the oven and roast until tender – about 20 minutes – turning over halfway through.
Meanwhile, make the butter by mashing everything together. Salt to taste. Either chill (to melt the pats of butter over the wedges) or use it already melted as a dip.
This jerk butter is also great served melting over fish or chicken.
