Bermuda Summer Series by UMAMI


This series is my interpretation of summer.  


Bermuda Summer - I LOVE summer!  To me summer means fun and freedom.


This lightly salted thyme, oregano and garlic based blend is my version of that (but in a spice blend).  It is light and fun. 


Think salads, like tomato and watermelon salad, fruit, vegetable skewers, fish, next level potato salad, corn, potatoes, you get the idea. 


Make your own salad dressing with it, or add it to chimichurri and salsa verde.  Try it even when you are not sure and I bet you’ll knock it out of the park.  😊


Bermuda Fish - I know this is long overdue but local fish is a plenty right now, and whether you are grilling it, frying it or baking it, THIS is the blend for it. 


I can never choose between the herbs or the chiles so I don’t. 


I’ve packed the herbs in with chipotle and black pepper, onion and garlic to create a blend that screams fish and seafood.  It’ll liven up pasta dishes too (if that’s your thing. 👀)


I’m a turbot, red hind and snapper girl who makes whole fish a lot.  Use this blend to season the fish inside and out with, but also add it to your lemon butter sauce to go with.


Bermuda Braai - This braai blend combines Spanish smoked paprika with coriander, cumin, allspice and garlic (with a teensy bit of heat from cayenne) to create a very umami blend that is great on the grill but also everyday cooking.


I first heard of a braai a few years ago while doing research for the spice club on barbecues around the world.


The word braai pronounced "bry") is Afrikaans for barbecue or grill.  Like most cultures, barbecuing is about more than just the meal in South Africa.  


It is a social event but has specific traditions and social norms surrounding it.  The meat is cooked over a wood grill called a braai stand and everyone chips in with the ingredients. The host is always in charge of the fire and you never mess with another person’s fire.


This sense of coming together and community really resonated with me at the time and still does (maybe even more so now). 


I hope when using this blend you manage to capture the joy and friendship of the braai.
